Just found your original post along with 5 other Psub posts in junk mail!
I have been doing similar with my Vesc controllers & joysticks.
I have a relatively small 3 axis joystick with switch.
I don't think the sensitivity will be too much of an issue once it's pushing a
submarine, as there will be a considerable amount of propeller slip softening
the motion.
I have my inflatable set up with joystick control, testing my thruster & various
motor controllers.
My intension is to build a custom flight control type joystick with a thumb slide
oriented vertically to be intuitive for the vertical thruster control.
