Scott,
if you do a google image search on lithium iron "internal" or "assembly"
or something like that, you find lots of variations. Some are cylinders
stacked inside a square container, sometimes stacked vertical, sometimes
horizontal; so lots of air pockets. Others are plates.
In the case of SWE the battery internals can take massive pressure, but
you couldn't guarantee that with every battery on the market. I would
assume they could but wouldn't be positive.
If I were doing a hack I would get a dead battery of the type I was looking
at & cut the top off to see how I would do it. (did that with my AGM battery hack)
You could possibly take the tops off the batteries or drill holes in the
tops of every cell to let any air escape when you oil filled them. Then
put your battery pack in a box with a neoprene diagphram over the top & oil fill.
Like Hank is intending to do, or they do with the Deep Sea Power & Light
Sea Battery (AGM).
My lithium batteries don't have individual cel balancing electronics that I
can see. Some have them external to the battery. All I required was a 48V
battery charger if I was assembling 4 x 12V into a 48V pack.
Hugh's batteries were a bit more complex & he had a bad experience through
not regularly charging them.
Having said all that, when I talked with SWE I believe they were applying 
for ABS type approval, or something similar. If you are wanting certification
you may get knocked back on a lithium battery hack.
If it were me I would go & see them & pick their brains. You may find out 
how to do it yourself, or they may do a good deal for you.I am building my own thrusters to save money, but some times it's cheaperto buy it off the shelf when you cost out your time & the resultant inferior product. :)

Thank you for that info Alan. I am sure they charge plenty for it being pre-fabed for underwater work. I was hoping to take lithium car batteries and see if there was a way to oil compensate them.
