Careful! If you weld a ring on the way you describe with the weld in the middle, the weld shrinkage on either side of the head wall can bend the SS, leaving you with a curved SS ring. I can tell you from painful experience the amount of deflection can be amazing, we're not talking a few hundredths... In my case it was about a quarter inch. I'd recommend cutting the head so it meets the ring at the outside corner.
