Sean,
For sure that is a solution, and it may come to that.  I am in no hurry to take a passenger and the weight is fine for one person.  As for stability, I am happy to report that I can stand on the deck and hop inside with no worries. But your right, more stability is always good.

 There's always the not-so-easy but
 very elegant solution of syntactic
 foam filled hydrodynamic fairings.  Go bigger than you
 need to
 accommodate future expansion, and compensate in the meantime
 with keel
 weight.  Would improve stability, too.
